I think the default install of sendmail should work for most cases.
However if you want more control of your mail, you may modify the
m4 files and use m4 to generate custom sendmail.cf. It's a better
way than hack the sendmail.cf directly. Sendmail has many template
m4 files, and you should read the README and FAQ carefully before
create your own m4 files. But it's really fun to hack the m4 files
and you can study a lot from it.
